Frozen Mounds of Refried Beans

Our pantry is always stocked with a couple of cans of refried beans. Slap some between a couple of Food for Life brown rice tortillas, spray both sides with a little olive oil, brown in frying pan and you've got a zippity quick lunch for kids. The thing is, we RARELY use an entire can. I would end up putting the leftover beans in a Pyrex dish and then a science project weeks later in the back of the fridge (yuck). So the other day I experimented with freezing scoops of the refried beans and it worked great! I used a 2 tablespoon scooper, scooped mounds onto a plate and froze. Once frozen I tossed them into a storage container and, voila, no more waste. Now I take a few out in the morning and by noon they are thawed and ready to smoosh between two tortillas. Or for those who have not banished the microwave, you can thaw them that way. Pretty slick!

I'm embarassed to admit that I probably have about 10 science projects in my fridge at any given time. Yuck. Great tip!!

EEEK! Not yet. Shhhhh. The good thing is that when you don't have a lot of processed food around, you don't really use it that much. But ... I am not perfect! Never will be ... : ) ha!

I just want to say THANK YOU for the GF pita bread, you would have thought my kids had won the GF ICE CREAM LOTTERY! They said,"Mom that was the Bom thank you so much." Needless to say it brought tears to my eyes. This is all new to me since April due to my childs "impulsivities and uncontrollable body movements. They are 5, 6 respectively and the wheat/gluten free diet has changed our house in a wonderful, but sometimes challenging way. However difficult it may be sometimes, I would never go back. The change in my children and household is absolutely mindblowing. I have lurked in the background on your website, and have admired your spirit and add, like mine! Thank you for so many wonderful ideas RENEE HUFF
