Slow Cooker Beef Stew

Okay! So you've read the Lexie's Stew Seasoning post or have landed here from my guest post at The Spunky Coconut. Thanks for visiting. If you're in the mood for stew, you've come to the right place. Once you have a batch of Lexie's Stew Seasoning ready to go, making a hearty and comforting stew is a snap.

Gluten-Free Slow Cooker Beef Stew

Serves: 6-8
Prep Time:  20 minutes
Cook Time:  4-8 hours in a slow cooker


2 pounds beef or bison STEW MEAT, 1-1/2" cubed
2-4 tablespoons GRAPESEED OIL (or other high smoke point oil)
6 cups 1" cubed POTATOES
2 cups 1/2" sliced CARROTS
2 cups 1/4" sliced CELERY STALKS
2-32 ounce cartons SOUP or BROTH (see notes for options, read ingredients list for potential allergens)


1. Toss meat with stew seasoning and brown in oil.

2. Add to slow cooker; browned meat, potatoes, carrots, celery and soup.

3. Cook on high 4-6 hours or on low 6-8 hours or until meat is tender.

4. Salt and pepper to taste prior to serving. Looking for a little zing? Add some chili sauce such as Cholula Hot Sauce!


Experiment with other veggies; kohlrabi, turnip, green beans, summer squash.
Use the pre-made soup or broth that suits your diet (see below). Alternatively, use 5-7 cups of beef broth with some extra onion and garlic goodness thrown in.

Ingredients in Pacific Natural Foods French Onion Soup: Filtered water, organic sauteed onion base (organic onions, organic dried onion, salt, organic butter (milk), natural flavor), organic cane sugar, organic onion flavor (contains organic sunflower oil), sea salt, organic garlic powder, autolyzed yeast extract, xanthan gum. Gluten-free. Contains: milk.

Ingredients in Pacific Natural Foods Organic Beef Broth: Organic beef stock (water, organic beef), organic beef flavor base (organic roasted beef including beef juices, organic cane juice, organic beef flavor, organic onion powder, sea salt, organic canola oil, caramel color, organic garlic powder, organic black pepper, organic paprika, flavor), sea salt, autolyzed yeast extract, organic garlic powder. Contains caramel color but Pacific claims this soup is gluten-free. Dairy-free.

Ingredients in Imagine Natural Creations® Creamy Portabello Mushroom Soup: Filtered water, portobello mushrooms, organic onions, organic soymilk (filtered water, organic soybeans), organic potatoes, organic celery, organic rice flour, organic expeller pressed canola oil and/or safflower oil and/or sunflower oil, sea salt, organic onion powder, organic garlic powder, organic spice. Gluten-free. Dairy-free. Contains: soy.

Is it cold up your way? It's windy and cold here. The cold and snow, I don't mind, but this icy wind is for the birds (penguins). Perfect day for your slow-cooker stew. Do you deliver? Seriously, your stew seasoning looks delicious and the stew wonderful. Did you get the notice from Sari (notes from the barnyard) about the new 100% organic, grass fed beef people (cows, not people) in Wellington? I may try that. I'll keep you posted. This is simmering in my slow-cooker as I speak. The house smells delicious. While it's not cold during the day this week in California (70ish), by sundown it gets pretty chilly. I'm new to gf and I really appreciate these recipes that don't require much tweaking so the whole family can enjoy. All I had to do was buy the rice flour. Now to find a great recipe for gf french bread. Too late for today but definitely next time.

Hi Jeri, please report back with a review. Any suggestions for improvement? You are so right about there being a lot of support for GF and special diets online. Elana at elanaspantry.com was the first blog I started following. She was a fantastic help to me. Working on a recipe for molasses bread ... that'd go real nice with this stew : )

I use the Pacific Natural Foods broth for my beef stew, too. I'll have to give your special seasonings a try. Our first real snow yesterday and I'm making a white bean chili in the slow cooker today to keep warm.

This stew looks so good.... I love using the slow cooker too!! Thanks!

This stew was very delicious. It didn't thicken up as much as I wanted it to - maybe I didn't use enough seasoning. I pulled some broth out and thickened it up on the stove with arrowroot and put it back in the crockpot. We all loved it. Thanks Lexie.

Thanks for the comment Jeri! Yes, this is not a super thick stew as I try to keep the flour/grain in this recipe to a minimum. I will add this tip that I use to thicken stew and other soups; remove some of the vegetables that are in the stew (potatoes are ideal) once they are fully cooked. Mash or puree (with some of the cooking liquid) in a food processor or blender. Stir puree into the stew. Voila :)

Somehow I missed this stew when you posted it before. It looks totally delicious, Lexie. And it's going to be cold here this weekend. Hubby is trying to talk me into going camping at our mtn property, which normally I love doing, but it will feel like the 30s with the wind chill there during the day tomorrow and in the 20s at night. Yikes! Plus, there's some rain in the forecast and it's my dad's birthday on Sunday. I love the idea of staying home and making this stew. ;-) I'll use venison in ours.
