NEW Spunky Coconut Cookbook

Kelly is the incredibly talented recipe developer, mom and voice behind the blog The Spunky Coconut. On that day Kelly was especially giddy and for good reason, her second cookbook, The Spunky Coconut Grain-Free Baked Goods and Desserts, was just days away from launching.

This morning I got THE call from an elated Kelly giving me the green light to publish this post. Her cookbook had hit the shelves of The Spunky Coconut e-Store and Amazon. I don't know about you, but I have a handful of family and friends who will be receiving cookbooks this holiday—this one in particular (we tend to give what we want to receive, ha!). Kelly was kind enough to give me a signed copy of the cookbook last weekend and in the four days I've had this delicious cookbook in my hot little hands I have made:

Steamboat Yogurt | At about the same time this spring, Kelly and I began fooling around with making non-dairy yogurt (we even met in Ft. Collins one day to swap tastes!). What I love about her version is the creaminess the cashews add. I am so in love with nut yogurts!

Chia, Nuts, Hemp Seed Oh My!

If you follow a grain-free, gluten-free, casein-free, egg-free diet or any combination thereof or if you are trying to include in your diet low-glycemic, nutritionally dense foods that are power-packed with the undeniable goodness of ingredients like coconut, chia seed, hemp seed, legumes and nuts, this book is for you! Kelly photographs and designs her cookbooks, front to back, inside and out. She self-publishes through their family press, Apidae Press, with her husband Andrew (an author and designer). Their books are printed on demand here in the USA. This means that they are printed one at a time, as they are ordered, as opposed to a big print run of thousands of books.

We have purchased about 24 of The Spunky Coconut cookbooks for friends since we discovered it last year. It is our go-to recipe book! Cute picture of you with Kelly! That must have been a fun event! We had planned to buy Kelly's new cookbook, but we have had a HORRIBLE few months and will not be able to buy it for a while.

I don't know if you remember that right after my 40th Bday we found out we were pregnant? Well, tragically, we miscarried our baby in our 2nd term, which broke our hearts. Then my DH lost his amazing job of 12 yrs and cannot find another. Our 2 yr old spends more & more time at Seattle Children's Hospital while they try to help her. And, if that isn't all enough, the docs have determined that we lost our baby because I have an autoimmune disorder and coronary artery disease...(which we never knew). So, we are praying our way through these trials and watching in amazement as God provides food and keeps the lights on for us! What a blessing this time has been, though because we are truly able to see the bare bones of what matters in life...God and family!

We would LOVE to win this cookbook, as I know it is full of many recipes that would join other Kelly creations as weekly regulars in our kitchen. Blessings to you and Happy Thanksgiving!

I have Kelly's first cookbook and we love it! My little boy was diagnosed with Autism last year and when I found Spunky Coconut I was so excited! It was just what we were looking for. Now I have discovered that he is sensitive to eggs so we just took eggs out of the diet (along with gluten, casein, soy, sugar, and peanuts). When I read that 50 of the recipes in this new cookbook are egg free I couldn't believe it. Awesome! I hope to win! :)

I put this book on my Amazon wish list. I'd love to have it because I went grain free (in addition to gluten free more than a year ago) about 2 months ago and am struggling to be positive. On top of everything, I have to be dairy free and egg free too. I also can't have tree nuts, legumes, peanuts, soy, tomatoes, and potatoes. Sigh.....
